I hear you, Chanelle. Beans and nuts *do* have carbohydrate and anyone who
is carb-counting has to account for the carbohydrate in them. However, beans
have plenty of fiber so the rise in carbohydrate isn't as abrupt as it is
for carb-rich foods without much fiber.
As I say, I hear you about people not comprehending how Type 1's and LADA
people adjust and compute their insulin and about the difficulty with
home-made foods. That's why I like fats (not to excess) and protein-rich
stuff like meats!
In fact, I go against the orthodoxy in that I'm not convinced that the proof
for the harmful nature of saturated fats is all that strong; even Dr.
AGaston of the south Beach Diet says this.
But the key is portion-control and, though I hate to say it, exercise.

Some beans and nuts have carbohydrates. For example, 1/2 cup of black beans
is 15 grams of carbohydrate. Nuts also have good natural fats, but I have
heard that only a very small serving of them is needed. I like to eat
vegetarian as much as possible. The problem is that homemade
recipes--especially when someone doesn't measure ingredients--are tricky to
figure out carb amounts for. Most people don't understand that
diabetics--especially people with Type 1--use carbohydrates to determine
insulin and not glycemic index, which is quite frustrating. I will stop
